Sweet potato and chic pea curry.....

This is one of my favourite veggie meals (I'm not vegetarian, but I do enjoy veggie food!!) , not just because it is easy, but it freezes well, and just tastes delicious!!
 
 Simple ingredients......

peel and cut up sweet spud and roast in oven until soft.....


chop up onion quite small.....


fry onion in a little oil, add peanut butter and keep stirring, then when it has melted, add coconut milk..                          


then add curry powder.....


then add cooked sweet potato and chick peas and some tinned chopped tomatoes and more curry powder, and maybe a bit of salt and pepper, but add to your taste....


then top with fresh spinach leaves, cover for a while on low heat until the leaves wilt....


and I'm afraid this last picture looks a bit 'anaemic' as I was more interested in serving it up on my plate with rice, poppadoms, mango chutney etc....!!!  Honest it is a bit more colourful than this picture, I think I need a new camera!!!


And very nice it was too!!! Also, any leftovers  (quite rare in my house!!)  went into the freezer for a quick lunch when everyone is out!!!
